How do you do this? I'm sure it's really simple and I'm looking with my eyes closed but I can't the option anywhere

Go to the system tab on your 360 dash board. Select memory which will then make you selct your hard drive.
Go to gamer proflies select the one that you want to delete, it gives you two options in there move and delete, chose from the following delete options and there you have it.
