Why do you have to sew it to the top? Surely the coke needs to touch the mentos for this to work. If not, then there is no reaction. Wouldn't this work the same just by shaking the bottle?

You don't sew it to the top, the top holds the thread so that the Mentos dangles but doesn't touch the coke, then when you open the lid the mentos drops in and hence reaction.

It wouldn't be as good if you just shake the bottle, and you would have to hope someone opens it soon after you shake it whereas this way there is no time limit.
