Scarbs'

Your way is untidy but not incorrect :)

I don't mind being untidy and, indeed, this suggests that I was correct.

does it???

For plural nouns that end in the letter s, the noun is simply followed by an apostrophe. For example: businesses becomes businesses’ and chickens becomes chickens’.

Yes, it does. Scarbs is not a plural noun; you should have looked at the 'bus' eaxample in the section for singular nouns.
