Biologically nothing. The same as biologically there is no difference between the Common Carp and Koi Carp. All species are Cyprinus carpio.

The only difference between the Japs and the Israelis is the depth of the cromatophores and the skin quality (ie comparing a gloss finish to a matt finish) brought about by hundreds of years of farming excellence in the northern mountains of Japan resulting in a much higher grade of fish.

Due to the Japanese climate and land properties, the water quality for koi out there is optimum
