Stopping the feeding for a day or so will do no harm, or just feed on or two flakes a day. Yep, 10% w/c.

You reckon they are just struggling with the ammonia? which I guess is/was unavoidable anyway?
It doesn't sound like they are struggling too much. What you are currently going through is a natural, unavoidable process, as you point out.
 
Although I understand you can cycle the tank without fish initially? with chemicals that start the cycle process off? Is that any good?
 
I bet the Brits are the best in the world at cycling the water.

Its best to let your tank stand for a week with everything running and with out fish ,so that it can build up the Bactria before you add your fish.

that's what i was told when i first set up our tropical tank ,marine is the same but 2-3 months

Was always told to put a small amount of hardy fish in right from the start to produce the ammonia for the bacteria to grow on. I started with 5 Danio's and they were my favourite fish the entire time i had my set-up.

How does it cycle bacteria without fish in it?
 
the water has bacteria in it so does anything you put in the tank .

it just get your filter and everything stable before adding your fish

I'm aware the longer you leave it the more stable the water is but it does absolutley zero to starting the Ammonia cycle.
